Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup edamame, shelled and cooked
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Fresh cilantro for garnish


Instructions

  1. In a large bowl, combine the chickpeas, edamame, bell pepper, cucumber, and red onion.
  2. In a separate bowl, whisk together sesame oil, grated ginger, soy sauce, and rice vinegar until well combined.
