Ingredients
- 1 can chickpeas, rinsed and drained
- 1 cup edamame, shelled and cooked
- 1 bell pepper, diced
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons sesame oil
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Sesame seeds for garnish
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the chickpeas, edamame, bell pepper, cucumber, and red onion.
- In a separate bowl, whisk together sesame oil, grated ginger, soy sauce, and rice vinegar until well combined.
- Pour the dressing over the salad and toss to coat all ingredients evenly.
