Ingredients
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup chopped cucumber
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the rinsed and drained chickpeas, chopped cucumber, crumbled feta cheese, chopped red onion, chopped fresh parsley, and chopped fresh mint.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Pour the lemon olive oil dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for later.
Notes
