A delightful chicken salad combining savory chicken, sweet grapes, and crunchy walnuts, perfect for lunch or a light dinner.
Ingredients
- 2 cups cooked chicken (shredded, such as rotisserie)
- 2/3 cup mayonnaise (or sour cream or Greek yogurt)
- 2 tablespoons fresh parsley (chopped)
- 1/4 cup red onion (finely diced)
- 1/2 cup red grapes (quartered or halved)
- 1/2 cup celery (diced)
- 1/4 cup walnuts (chopped)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, mix together the mayonnaise, salt, black pepper, and fresh chopped parsley.
- Add the shredded chicken, halved or quartered grapes, diced celery, chopped walnuts, and diced red onion.
- Stir well to combine all the ingredients.
- Serve on sandwiches, in lettuce wraps, or on top of a green salad.
Notes
For best flavor, use leftover rotisserie chicken. Adjust mayo to taste for a lighter version.
