A delightful chicken salad combining savory chicken, sweet grapes, and crunchy walnuts, perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken (shredded, such as rotisserie)
  • 2/3 cup mayonnaise (or sour cream or Greek yogurt)
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 cup red onion (finely diced)
  • 1/2 cup red grapes (quartered or halved)
  • 1/2 cup celery (diced)
  • 1/4 cup walnuts (chopped)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, mix together the mayonnaise, salt, black pepper, and fresh chopped parsley.
  2. Add the shredded chicken, halved or quartered grapes, diced celery, chopped walnuts, and diced red onion.
  3. Stir well to combine all the ingredients.
  4. Serve on sandwiches, in lettuce wraps, or on top of a green salad.

Notes

For best flavor, use leftover rotisserie chicken. Adjust mayo to taste for a lighter version.
