Description
A delicious and hearty one-pan meal that combines tender chicken, colorful bell peppers, and spices, all baked with gooey melted cheese.
Ingredients
- 2 tbsp olive oil or butter
- 1 lb boneless skinless chicken breasts or thighs, diced
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 packet fajita seasoning
- 1 cup salsa
- 1 cup cooked rice
- 1 can 15 oz black beans, drained and rinsed (optional)
- 1 1/2 cups shredded Mexican cheese blend, divided
- 1/4 cup chopped fresh cilantro (optional)
- Sliced avocado or guacamole (optional)
- Sour cream or Greek yogurt (optional)
- Diced tomatoes (optional)
- Shredded lettuce (optional)
- Lime wedges (optional)

Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes.
- Push the chicken to one side of the skillet and add the sliced onions and bell peppers. Sauté until softened and slightly caramelized, about 5 minutes.
- Stir in the minced garlic and fajita seasoning, cooking for 1 minute until fragrant.
- In the prepared baking dish, spread the cooked rice evenly across the bottom.
- Layer the chicken and veggie mixture on top of the rice.
- Stir in the salsa and black beans (if using) and then spread the mixture evenly over the rice.
- Sprinkle 1 cup of shredded cheese over the top.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
Notes
Customize with your favorite toppings like fresh cilantro, avocado, sour cream, and diced tomatoes. Pairs well with shredded lettuce and lime wedges.
