Description

A delicious twist on classic meatloaf, combining ground chicken with Swiss cheese and turkey ham for a rich flavor.


Ingredients

  • 2 lbs. ground chicken
  • 1 egg
  • 1/4 cup plain bread crumbs
  • 2 teaspoons minced onion
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 slices Swiss cheese
  • 8 slices turkey ham
  • 1 tablespoon chopped parsley
  • For the Gravy:
  • 1 1/2 cups chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon Dijon mustard


Instructions

  1. Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  2. In a large bowl, mix the ground chicken, egg, bread crumbs, minced onion, garlic powder, kosher salt, and black pepper until fully combined.
  3. Place a piece of parchment paper on your counter and press the meatloaf mixture into a rectangle about 12″x10″.
  4. Lay the Swiss cheese on top of the meatloaf mixture, then add the turkey ham.
  5. Roll the meatloaf up tightly, using the parchment paper for help. Seal the ends, and place the meatloaf seam side down on the prepared baking sheet.
  6. Bake for 50-55 minutes until the meatloaf is cooked through.
  7. While the meatloaf bakes, prepare the gravy. In a small pot, whisk together the chicken broth, cornstarch, and Dijon mustard. Bring it to a simmer and cook until thickened.
  8. Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with the gravy and a side of steamed vegetables.

Notes

For a different flavor, try substituting turkey ham with regular ham or cooked bacon. You can add herbs like thyme or Italian seasoning for extra flavor.
