Description
A delicious twist on classic meatloaf, combining ground chicken with Swiss cheese and turkey ham for a rich flavor.
Ingredients
- 2 lbs. ground chicken
- 1 egg
- 1/4 cup plain bread crumbs
- 2 teaspoons minced onion
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 slices Swiss cheese
- 8 slices turkey ham
- 1 tablespoon chopped parsley
- For the Gravy:
- 1 1/2 cups chicken broth
- 1 tablespoon cornstarch
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper or aluminum foil.
- In a large bowl, mix the ground chicken, egg, bread crumbs, minced onion, garlic powder, kosher salt, and black pepper until fully combined.
- Place a piece of parchment paper on your counter and press the meatloaf mixture into a rectangle about 12″x10″.
- Lay the Swiss cheese on top of the meatloaf mixture, then add the turkey ham.
- Roll the meatloaf up tightly, using the parchment paper for help. Seal the ends, and place the meatloaf seam side down on the prepared baking sheet.
- Bake for 50-55 minutes until the meatloaf is cooked through.
- While the meatloaf bakes, prepare the gravy. In a small pot, whisk together the chicken broth, cornstarch, and Dijon mustard. Bring it to a simmer and cook until thickened.
- Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with the gravy and a side of steamed vegetables.
Notes
For a different flavor, try substituting turkey ham with regular ham or cooked bacon. You can add herbs like thyme or Italian seasoning for extra flavor.
