Ingredients
- 1 cup cooked rice
- 1 cup shredded cooked chicken
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1 lime, cut into wedges
- Salt and pepper, to taste
Instructions
- Prepare the rice according to package instructions.
- Divide the cooked rice among serving bowls. Top with shredded chicken, black beans, corn, cherry tomatoes, avocado, red onion, cilantro, and cheddar cheese.
- Dollop sour cream on top and squeeze lime juice over the bowls. Season with salt and pepper.
