A quick and delicious stir-fry featuring tender chicken, colorful bell peppers, and a savory sauce, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts, diced
  • 1 green bell pepper, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes (optional)
  • 1 tsp cornstarch
  • 2 tbsp water (for slurry)
  • 1 cup cooked jasmine rice
  • Sesame seeds
  • Sliced green onions


Instructions

  1. Heat a skillet or wok over medium-high heat. Add sesame oil and stir-fry the chicken for 5-6 minutes until cooked through. Remove and set aside.
  2. Sauté the minced garlic for about 30 seconds until fragrant. Add the sliced bell peppers and stir-fry for 3-4 minutes until tender-crisp.
  3. Return the chicken to the skillet. Add soy sauce, oyster sauce, and chili flakes if using. Stir well.
  4. Mix cornstarch with water to make a slurry. Add it to the skillet and cook for 2-3 minutes until the sauce thickens.
  5. Serve the stir-fry over steamed jasmine rice, garnished with sesame seeds and sliced green onions.

Notes

For extra flavor, marinate chicken in soy sauce and garlic for 30 minutes before cooking.
