Delicious burritos filled with savory chicken, crunchy bell peppers, and creamy ranch dressing, perfect for busy weeknights or casual gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup bell peppers, chopped (any colors you like)
- 1/2 cup ranch dressing
- 1 cup cheese (cheddar or your favorite)
- 4 large flour tortillas
- 1 can black beans, drained (optional)
- 1/2 cup corn (optional)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, chopped bell peppers, ranch dressing, and cheese. If using black beans and corn, add those too. Season with salt and pepper.
- Warm the tortillas in a pan or microwave for a few seconds.
- Take a tortilla and place a generous amount of the chicken mixture in the center.
- Fold in the sides of the tortilla and roll it up tightly to form a burrito.
- Repeat with the remaining tortillas and filling.
- If desired, place the burritos seam-side down in a baking dish.
- Top with extra cheese and bake at 350°F (175°C) for about 10 minutes, or until the cheese is melted.
- Serve warm and enjoy!
Notes
Use leftover chicken for a quicker meal. Customize with other veggies or spices as desired.
