Ingredients
- 1 (10 oz) jar maraschino cherries, drained and finely chopped
- 2 cups powdered sugar
- 2 tablespoons unsalted butter, softened
- 1/2 teaspoon almond extract
- 1/8 teaspoon salt
- 1 1/2 cups semisweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/2 cup crushed peanuts (optional)
Instructions
- In a bowl, mix together the chopped cherries, powdered sugar, softened butter, almond extract, and salt until well combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill in the refrigerator for about 30 minutes until firm.
- In a microwave-safe bowl, melt the chocolate chips and peanut butter together, stirring until smooth.
- Dip each cherry ball into the chocolate mixture, ensuring they are well coated.
- Roll in crushed peanuts if desired, and return to the parchment-lined baking sheet.
- Let the truffles set in the refrigerator until the chocolate is firm before serving.
