Description

Delicious and easy Cheesy Mashed Potato Puffs that are fluffy on the inside and crispy on the outside, perfect as a side dish or appetizer.


Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and chopped green onions.
  3. Season with salt and pepper to taste and mix until well combined.
  4. Using a spoon or cookie scoop, form small balls of the mixture and place them on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy.
  6. Enjoy your cheesy mashed potato puffs hot!
