Delicious and easy Cheesy Mashed Potato Puffs that are fluffy on the inside and crispy on the outside, perfect as a side dish or appetizer.
Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup milk
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and chopped green onions.
- Season with salt and pepper to taste and mix until well combined.
- Using a spoon or cookie scoop, form small balls of the mixture and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy.
