Ingredients
- 2 cups mashed potatoes (leftover or fresh)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup milk
- 2 green onions, finely chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, green onions, salt, and pepper. Mix until well combined.
- Scoop out the mixture and form into small puffs.
- Place the puffs on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes or until golden brown and crispy on the outside.
- Serve warm and enjoy your cheesy mashed potato puffs!
