Description

Crispy outside and creamy, cheesy inside, these Cheesy Mashed Potato Puffs are a delightful way to use up leftover mashed potatoes or serve as a tasty side dish.


Ingredients

  • 2 cups mashed potatoes (leftover or fresh)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 2 green onions, finely chopped
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, green onions, salt, and pepper. Mix until well combined.
  3. Scoop out the mixture and form into small puffs.
  4. Place the puffs on a baking sheet lined with parchment paper.
  5. Bake for about 20-25 minutes or until golden brown and crispy on the outside.
