A delicious and satisfying meal combining tender chicken breasts with a creamy, cheesy mushroom filling that bursts with flavor.
Ingredients
- 4 boneless skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the chopped mushrooms and sauté for about 5 minutes.
- Add the minced garlic, thyme, parsley, and a pinch of salt and pepper. Cook for an additional 2 minutes and set aside to cool slightly.
- In a bowl, combine the sautéed mushroom mixture with cream cheese and mozzarella cheese, stirring until smooth.
- Carefully slice each chicken breast horizontally to create a pocket.
- Spoon the cheesy mushroom mixture evenly into each chicken breast, using toothpicks to secure the openings if needed.
- Melt the remaining 2 tablespoons of butter in the same skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side.
- Transfer the seared chicken breasts to the prepared baking dish and sprinkle grated Parmesan cheese over the top.
- Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
- Once done, let the chicken rest for 5 minutes before serving and sprinkle with fresh parsley.
Notes
Serve with a side of mashed potatoes, a fresh garden salad, or some steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
