Cheesy Garlic Butter Mushroom Stuffed Chicken

Description

A delicious and satisfying meal combining tender chicken breasts with a creamy, cheesy mushroom filling that bursts with flavor.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the chopped mushrooms and sauté for about 5 minutes.
  3. Add the minced garlic, thyme, parsley, and a pinch of salt and pepper. Cook for an additional 2 minutes and set aside to cool slightly.
  4. In a bowl, combine the sautéed mushroom mixture with cream cheese and mozzarella cheese, stirring until smooth.
  5. Carefully slice each chicken breast horizontally to create a pocket.
  6. Spoon the cheesy mushroom mixture evenly into each chicken breast, using toothpicks to secure the openings if needed.
  7. Melt the remaining 2 tablespoons of butter in the same skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side.
  8. Transfer the seared chicken breasts to the prepared baking dish and sprinkle grated Parmesan cheese over the top.
  9. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  10. Once done, let the chicken rest for 5 minutes before serving and sprinkle with fresh parsley.

Notes

Serve with a side of mashed potatoes, a fresh garden salad, or some steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
