Description

A delicious and simple dish combining tender chicken, melted cheese, and fresh veggies in a crispy tortilla.


Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and bell peppers, and sauté until softened.
  3. In a separate bowl, combine shredded chicken with salt and pepper.
  4. Place one tortilla in the skillet, layer with cheese, chicken, sautéed veggies, and another layer of cheese.
  5. Top with a second tortilla and cook until golden brown on both sides, flipping carefully.
  6. Remove from skillet, cut into wedges, and serve with sour cream and salsa.

Notes

Use pre-cooked rotisserie chicken to save time. Feel free to add other veggies like spinach or mushrooms for extra flavor. If you like it spicy, add some jalapeños or hot sauce.
