A delicious and simple dish combining tender chicken, melted cheese, and fresh veggies in a crispy tortilla.
Ingredients
- 2 chicken breasts, cooked and shredded
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sour cream and salsa for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, and sauté until softened.
- In a separate bowl, combine shredded chicken with salt and pepper.
- Place one tortilla in the skillet, layer with cheese, chicken, sautéed veggies, and another layer of cheese.
- Top with a second tortilla and cook until golden brown on both sides, flipping carefully.
- Remove from skillet, cut into wedges, and serve with sour cream and salsa.
Notes
Use pre-cooked rotisserie chicken to save time. Feel free to add other veggies like spinach or mushrooms for extra flavor. If you like it spicy, add some jalapeños or hot sauce.
