A delightful one-pan meal combining juicy chicken, creamy cheese, and tender pasta, perfect for quick family dinners.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 ounces pasta (rotini or any pasta you like)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add butter and minced garlic, cooking until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring well to combine. Bring to a gentle simmer.
  4. Add the pasta to the skillet, cooking until al dente according to package instructions. If needed, add extra broth or water to achieve desired creaminess.
  5. Stir in the cooked chicken, mozzarella, cheddar, and Parmesan cheese. Mix until the cheeses are melted and the skillet is creamy.
  6. Season with garlic powder, onion powder, and additional salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

Serve hot with a sprinkle of extra cheese or Cajun seasoning. Pairs well with a green salad or garlic bread.
