Description

Delicious muffins filled with creamy cheesecake and a rich chocolate exterior, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine melted butter, milk, vanilla extract, and eggs. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Fill each muffin cup halfway with chocolate batter, add a spoonful of the cream cheese mixture, and then top with more chocolate batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Store in an airtight container at room temperature for 2-3 days or freeze for up to a month.
