A simple and delicious one-pot meal combining tender shrimp, fresh spinach, and cheesy pasta, perfect for a quick weeknight dinner or cozy weekend treat.
Ingredients
- 1 box Penne Pasta
- 1 lb Shrimp (peeled and deveined)
- 3 cups Fresh Chopped Spinach
- 1 cup Mozzarella or Swiss Cheese
- 3 Garlic cloves, minced
- 2 tsp Salt
- 2 tsp Pepper
- 2 tsp Garlic Salt
- 8 cups Water
- 2 tbsp Butter
- 1 tbsp Oil
Instructions
- Cook pasta and shrimp together in a pot of boiling water. Reserve 1 cup of pasta water.
- In a large pan, sauté the cooked pasta in butter and oil. Season with salt, pepper, and garlic salt.
- Add chopped spinach to the pan and cook until wilted.
- Stir in the shrimp and cheese until melted and well combined. Adjust seasoning to taste.
- Garnish with cilantro if desired. Serve and enjoy!
Notes
For extra flavor, consider adding bell peppers, mushrooms, or red pepper flakes. To make it creamy, add heavy cream or cream cheese.
