Ingredients
- Jumbo pasta shells
- Rotisserie chicken
- Cajun seasoning
- Bell pepper
- Ricotta cheese
- Three cheese blend
- Heavy cream
- Onions
- Garlic
- Butter
- Flour
- Milk
Instructions
- Boil jumbo shells in heavily salted water for exactly 2 minutes less than package directions. Rinse with cold water after draining.
- Sauté onions and bell peppers until translucent. Add garlic at the end. Add chicken and Cajun seasoning; allow to warm.
- Cook butter and flour until slightly nutty. Whisk in heavy cream and other liquids slowly until thickened.
- Spoon the filling into the shells. Arrange shells in sauce with openings upward.
- Cover with foil for the first baking phase, then uncover to finish baking.
Notes
Garnish with fresh parsley for added flavor and color. Adjust Cajun seasoning according to taste.
