Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch bite-sized pieces
- 1 1/2 teaspoons Italian seasoning blend
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups diced fresh tomatoes
- 2 tablespoons balsamic vinegar
- 1 tablespoon minced garlic
- 1 cup shredded mozzarella cheese
- 2 teaspoons fresh basil, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Cook until the chicken is no longer pink.
- Stir in the diced tomatoes, balsamic vinegar, and garlic. Cook for an additional 5 minutes.
- Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
