Description

A delicious and easy-to-make dish combining tender chicken, fresh tomatoes, and melty mozzarella cheese, bringing the classic Italian appetizer to a new level.


Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch bite-sized pieces
  • 1 1/2 teaspoons Italian seasoning blend
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups diced fresh tomatoes
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon minced garlic
  • 1 cup shredded mozzarella cheese
  • 2 teaspoons fresh basil, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Cook until the chicken is no longer pink.
  3. Stir in the diced tomatoes, balsamic vinegar, and garlic. Cook for an additional 5 minutes.
  4. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  5. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  6. Garnish with fresh basil before serving.

Notes
