Description

Deliciously rich and chewy brownies, easy to make and perfect for any occasion.


Ingredients

  • 6 medium eggs (or 7 small or 5 very large)
  • 200 g dark chocolate (preferably 70%, e.g., 150 g dark 70% and 50 g milk)
  • 250 g sugar (brown cane or a mix with regular)
  • 140 g all-purpose flour (about a cup)
  • 200 g butter (whole stick or ghee/coconut oil)
  • 3 tablespoons oil (about 30 g, e.g., rice oil)
  • 100 g cocoa powder
  • 1/2 teaspoon salt
  • Optional add-ins: rum, vanilla, cherries, raspberries, nuts, cinnamon, chili, cayenne pepper, blueberries, blackberries, red currants, peanut butter swirls.


Instructions

  1. Take the eggs out of the fridge in advance.
  2. Melt 200 g of butter in a water bath, saucepan, or microwave and set aside to cool.
  3. Pour three tablespoons of vegetable oil into the warm butter.
  4. Add sugar to the mixture and mix to eliminate lumps.
  5. Stir in salt and beat in the eggs.
  6. Mix thoroughly with a whisk until a uniform cream forms.
  7. Optionally, add vanilla, cinnamon, chili, cayenne, or rum along with the eggs.
  8. Sift flour and cocoa powder into the bowl.
  9. Slowly mix until a thick dough forms.
  10. Chop dark chocolate and stir into the batter.
  11. Line a baking pan with parchment paper and pour the batter in.
  12. Optionally, top with nuts or fruits.
  13. Bake in a preheated oven at 175 degrees C for 22-32 minutes depending on desired texture.
  14. Let cool for 20 minutes before cutting and serving.

Notes

Use high-quality chocolate for the best flavor. Don’t overmix the batter once flour is added.
