Description

Healthy, cheesy, and fun Broccoli Tater Tots that are perfect for snacks or side dishes.


Ingredients

  • 2 cups broccoli florets
  • 1 small shallot, minced
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup panko bread crumbs
  • 2 eggs
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Steam the broccoli florets for 2 minutes, then chop them finely.
  3. In a large bowl, mix the chopped broccoli, shallot, cheese, panko, eggs, salt, and pepper until fully combined.
  4. Scoop spoonfuls of the mixture and shape them into tater tot forms by hand.
  5. Place the shaped tots on the baking sheet and bake for 20 minutes or until golden and crisp.
  6. Serve warm straight from the oven.

Notes

Adjust the seasoning and consider adding garlic or onion powder for extra flavor. Store leftovers in an airtight container for up to three days.
