Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup buttermilk

- 4 cups powdered sugar
- 1 tsp vanilla extract

- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together flour, black cocoa powder, unsweetened cocoa powder, baking powder, baking soda, and salt. Set this aside.
- In a large bowl, beat the softened butter and vegetable oil together until light and fluffy.
- Add the granulated sugar and mix until it becomes airy and pale.
- Beat in the eggs one at a time, making sure they are well incorporated.
- Mix in the buttermilk, vinegar, vanilla extract, and a few drops of black food coloring.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes. Let the cakes cool completely.
- For the frosting, beat together the cream cheese and softened butter, then mix in the powdered sugar, vanilla extract, and a pinch of salt.
- For the mascarpone whipped frosting, whip the mascarpone cheese, heavy cream, powdered sugar, and vanilla until soft peaks form.
- Frost the cooled cake with your desired frosting.
- Let the cake rest before serving. It pairs well with milk or coffee and can be garnished as desired.
