Description
A comforting and delicious casserole that layers tortillas, seasoned ground beef, black beans, and melted cheese in a rich enchilada sauce.
Ingredients
- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons cumin
- 2 teaspoons chili powder
- 1 tablespoon all-purpose flour
- 15 ounces tomato sauce
- 1 cup chicken stock
- 2 cloves garlic (minced)
- 1 pound ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small yellow onion (diced)
- 4.5 ounces diced green chiles
- 15 ounces black beans (drained and rinsed)
- 12 corn tortillas (6 inches)
- 3 cups shredded colby jack cheese
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9 by 13 inch baking dish with cooking spray and set it aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and 1/2 teaspoon kosher salt. Sauté until the onion is translucent, about 5 minutes.
- In a separate skillet, add the ground beef and season with salt and pepper. Cook until the beef is broken up and cooked through, about 5 minutes. Add the second diced onion to the beef.
- For the enchilada sauce, stir chili powder and cumin into the sautéed onion and cook for about 30 seconds. Then stir in 1 tablespoon of all-purpose flour and slowly whisk in chicken stock. Stir in the tomato sauce and minced garlic, bring to a simmer, and cook for 5 minutes.
- Once the beef is cooked, drain the fat, and stir in the green chiles and black beans.
- Optionally, blend the enchilada sauce until smooth.
- Pour 1/2 cup of enchilada sauce into the bottom of the baking dish. Add another 1/2 cup to the beef mixture.
- Dip 6 tortillas in the remaining sauce and layer them in the dish. Add half of the beef mixture and top with 1 cup of cheese.
- Add the remaining 6 tortillas, layer the rest of the beef mixture on top, and sprinkle with the remaining 2 cups of cheese.
- Bake uncovered for 20 minutes, or until the cheese is bubbly.
Notes
Garnish with fresh cilantro, sliced avocado, or sour cream for extra flavor. Great for leftovers.
