Description

BBQ Chicken Quesadillas are a delicious and easy meal that combines tender chicken, tangy BBQ sauce, and melty cheese inside a crispy tortilla.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh cilantro, chopped
  • Oil for frying


Instructions

  1. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  2. Heat a skillet over medium heat and add a small amount of oil.
  3. Place one tortilla in the skillet, then layer half of it with the BBQ chicken mixture, cheese, and cilantro.
  4. Fold the tortilla over and cook until golden brown and the cheese is melted, about 2-3 minutes per side.
  5. Remove from the skillet and cut into wedges.
  6. Serve warm with extra BBQ sauce if desired.

Notes

Serve with a fresh salad, guacamole, or sour cream. For storage, wrap leftovers and refrigerate for up to 3 days, or freeze for up to 2 months.
