Description
Delicious BBQ Chicken Quesadillas made with shredded chicken, BBQ sauce, and cheese, perfect for a quick meal or party snack.
Ingredients
- Shredded chicken
- Good BBQ sauce
- Large flour tortillas
- Sharp cheddar cheese
- Sour cream (for serving)
- Salsa (for serving)
- Avocado or guacamole (for serving)
- Crispy tortilla chips (for serving)
- Diced red onion or bell peppers (optional)
- Jalapeños or hot sauce (optional)
Instructions
- Take your leftover chicken and shred it into bite-sized pieces.
- Toss it in a bowl with enough BBQ sauce to coat everything well.
- Get your skillet going over medium-low heat.
- Drop a tortilla in the heated pan and let it warm up for about 30 seconds.
- Sprinkle cheese over half the tortilla.
- Spoon your BBQ chicken mixture over the cheese.
- Top with more cheese.
- Fold the empty half over the filled side and press down gently with your spatula.
- Let it sit for about 2 or 3 minutes.
- Slide your spatula under the whole quesadilla and flip it over.
- Cook the other side for another 2 or 3 minutes.
- Pull it out of the pan and let it sit on your cutting board for about a minute before slicing into triangular wedges.
- Serve with sour cream, salsa, avocado or guacamole, and crispy tortilla chips.
Notes
For a spicy kick, include jalapeños or hot sauce in the filling. Store leftovers in an airtight container for up to 3 days.
