A delightful blend of flavors with crispy chicken and savory rice mixed with a tangy and spicy bang bang sauce.
Ingredients
- 2 Chicken breasts, cut into bite-sized pieces
- 3 cups Day-old rice
- 1/2 cup Bang bang sauce
- 1 Carrot, diced
- 1 Onion, chopped
- 1 cup Peas
- 2 Eggs, beaten
- 2 tbsp Sesame oil
- Salt, to taste
- 3 cloves Garlic, minced
- 2 tbsp Butter
- 2 tbsp Soy sauce
- 1 tbsp Lemon juice
- 2 Green onions, chopped
Instructions
- Toss chicken pieces with oil and seasonings. Cook chicken in an air fryer or skillet until golden brown and cooked through.
- Heat sesame oil in a skillet or wok. Pour in beaten eggs with salt, scramble, then remove and set aside.
- Add oil to the pan and cook carrots and onion for five minutes. Add minced garlic and sauté until fragrant.
- Add day-old rice, breaking up clumps. Let it sit to get crispy, then stir.
- Add the scrambled eggs, melted butter, soy sauce, lemon juice, and peas. Stir and cook until heated through.
- Toss the cooked chicken with bang bang sauce. Pile on fried rice, drizzle more sauce, and sprinkle with green onions. Serve hot.
Notes
Make sure to use day-old rice for best texture. Feel free to add other vegetables or protein like shrimp or tofu.
