Bang Bang Chicken Fried Rice

Description

A delightful blend of flavors with crispy chicken and savory rice mixed with a tangy and spicy bang bang sauce.


Ingredients

  • 2 Chicken breasts, cut into bite-sized pieces
  • 3 cups Day-old rice
  • 1/2 cup Bang bang sauce
  • 1 Carrot, diced
  • 1 Onion, chopped
  • 1 cup Peas
  • 2 Eggs, beaten
  • 2 tbsp Sesame oil
  • Salt, to taste
  • 3 cloves Garlic, minced
  • 2 tbsp Butter
  • 2 tbsp Soy sauce
  • 1 tbsp Lemon juice
  • 2 Green onions, chopped


Instructions

  1. Toss chicken pieces with oil and seasonings. Cook chicken in an air fryer or skillet until golden brown and cooked through.
  2. Heat sesame oil in a skillet or wok. Pour in beaten eggs with salt, scramble, then remove and set aside.
  3. Add oil to the pan and cook carrots and onion for five minutes. Add minced garlic and sauté until fragrant.
  4. Add day-old rice, breaking up clumps. Let it sit to get crispy, then stir.
  5. Add the scrambled eggs, melted butter, soy sauce, lemon juice, and peas. Stir and cook until heated through.
  6. Toss the cooked chicken with bang bang sauce. Pile on fried rice, drizzle more sauce, and sprinkle with green onions. Serve hot.

Notes

Make sure to use day-old rice for best texture. Feel free to add other vegetables or protein like shrimp or tofu.
