A delightful one-pan meal combining juicy chicken, fluffy rice, and colorful vegetables with a creamy spicy sauce.
Ingredients
- 1 lb boneless skinless chicken breasts, cubed
- 2 tbsp vegetable oil
- 2 cups cooked rice
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tbsp Bang Bang sauce (mayonnaise, sweet chili sauce, sriracha)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Add the cubed chicken and cook until browned and fully cooked through.
- Push the chicken to one side of the skillet and pour in the beaten eggs. Scramble the eggs until just set.
- Add the mixed vegetables and cooked rice to the skillet, stirring to combine all the ingredients.
- Pour the Bang Bang sauce over the rice mixture and stir until everything is well coated.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Use day-old rice for best texture. You can adjust the spice level of the Bang Bang sauce.
