Description

A delightful one-pan meal combining juicy chicken, fluffy rice, and colorful vegetables with a creamy spicy sauce.


Ingredients

  • 1 lb boneless skinless chicken breasts, cubed
  • 2 tbsp vegetable oil
  • 2 cups cooked rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tbsp Bang Bang sauce (mayonnaise, sweet chili sauce, sriracha)
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the cubed chicken and cook until browned and fully cooked through.
  2. Push the chicken to one side of the skillet and pour in the beaten eggs. Scramble the eggs until just set.
  3. Add the mixed vegetables and cooked rice to the skillet, stirring to combine all the ingredients.
  4. Pour the Bang Bang sauce over the rice mixture and stir until everything is well coated.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped green onions before serving.

Notes

Use day-old rice for best texture. You can adjust the spice level of the Bang Bang sauce.
