Baked Cream Cheese Chicken Taquitos

Description

Delicious and easy baked taquitos filled with a creamy chicken mixture, perfect for meals or snacks.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 10 small flour or corn tortillas
  • Olive oil spray or melted butter (for brushing)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the cooked chicken, cream cheese, shredded cheese, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well until combined.
  3. Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  4. Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla and roll tightly.
  5. Place the taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Lightly spray or brush the taquitos with olive oil or melted butter.
  7. Bake for 20-25 minutes until golden and crispy.
  8. Serve with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. These can also be frozen before baking for up to 2 months.
