Description

A creamy and nutritious twist on traditional egg salad, combining avocados and hard-boiled eggs for a quick and satisfying meal.


Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped chives
  • Salt and black pepper to taste
  • A pinch of chili flakes (optional)
  • Lime wedges for garnish


Instructions

  1. Mash the avocados lightly with a fork, keeping some chunks for texture.
  2. Mix in lime juice, salt, pepper, and chili flakes if desired.
  3. Chop 3 of the boiled eggs and gently fold them into the avocado mix.
  4. Slice the last egg on top, sprinkle with cilantro and chives, and add lime wedges on the side.
  5. Enjoy chilled or at room temperature.

Notes

Choose ripe avocados for the best texture. To keep the salad fresh, store in the refrigerator and consume within 1-2 days.
