A creamy and nutritious twist on traditional egg salad, combining avocados and hard-boiled eggs for a quick and satisfying meal.
Ingredients
- 2 ripe avocados
- 4 hard-boiled eggs
- 1 tbsp lime juice
- 1 tbsp chopped fresh cilantro
- 1 tbsp chopped chives
- Salt and black pepper to taste
- A pinch of chili flakes (optional)
- Lime wedges for garnish
Instructions
- Mash the avocados lightly with a fork, keeping some chunks for texture.
- Mix in lime juice, salt, pepper, and chili flakes if desired.
- Chop 3 of the boiled eggs and gently fold them into the avocado mix.
- Slice the last egg on top, sprinkle with cilantro and chives, and add lime wedges on the side.
- Enjoy chilled or at room temperature.
Notes
Choose ripe avocados for the best texture. To keep the salad fresh, store in the refrigerator and consume within 1-2 days.
